Dinner and Debt

I have no idea why I never divvied up my meat after purchasing.

I have cooked dinner pretty much all week, and nothing has gone to waste. I portioned everything and I’m loving it.

This week I’ve had pulled pork, chops and spaghetti. In the past, because it’s just me, at least 1/4 to half would have been wasted.

I even froze bell peppers and onions 🧅 now if I can figure out how to preserve lettuce 🥬

Tomorrow is pay day from the side gig. I’m excited because I’ll be adding funds to the CC as well as the EF. The goal is to save aggressively vs the paying down the CC debt until this pandemic situation is under control.

I hadn’t noticed until today, that I’ve got the card 💳 down to $4146, by tomorrow it will be below $4000, wow. I’m so excited about this. I’m sure as I see the balance decrease I’ll want to throw more at it, lol because I’m feeling that way now. Darn coronavirus

    Lettuce doesn't hold up to any kind of preserving, but you can saute spinach and then freeze it in serving sizes and it holds up. Same for kale or chard. You can always grow lettuce in pots on your patio. They are pretty full proof unless you have slugs and snails.

    Lettuce is the one thing I cannot manage to ever use up before it goes bad.
    If I only want it for salads I buy the prewashed stuff and then have salad every day for a week.
    But if I want to make lettuce wraps or put it on sandwiches too I just accept that some will get tossed.
    I think it is actually cheaper to buy the head of lettuce and toss some most of the time, but I hate throwing food out!

    It is always motivating to see that debt balance go down! I think its a smart strategy though to keep beefing up your EF too.

    Sometimes when I have too much lettuce I make a wilted lettuce salad. It reduces the bulk. You still can't preserve it, but you can eat it!

    Depending on the lettuce you buy, you can get it to last longer, by storing it with a papertowel ( or a kitchen dish towel) to absorb moisture.If it's in a plastic clam shell, put a paper towel in and fluff the lettuce every day. Other types, don't wash ahead of time but put a paper towel inside any plastic bags.
    Google it.

    If you have a porch with a railing, these are great for growing lettuce. Growing your own could save you $3 to $5 every week depending on how much lettuce you eat.

    If you don't have a porch with a railing, you could use any kind of container, like a five gallon water bottle with the top cut off or an old plastic ice cream bucket.

    I just eat a lot of salad whenever I buy lettuce. My last package of romaine hearts lasted over a week when stored in my humidity controlled drawer.

    I don't think it occurs to most people that you can even buy a whole package of meat, pork chops, for example, separate them and freeze them to cook later. I like to buy packages of chicken legs, cook them, and freeze them (2 to a bag) to eat later in the week. In the summer, when it is hot, this helps to not heat up the house so much by turning on the oven several times. It also saves me time.

    Another thing you can do for some dishes is to cook the meat however you would use it and then freeze it in whatever portion sizes you want. I know people who cook ground beef and stir in taco seasonings and then freeze the finished product for later.
